Abstract:
Objective A rapid method to measure the abiotic turbidity of grain-brewed cooking wine was established.
Method Based on light absorbance of fluids, optical density (OD) at varied wavelengths of light measured by a spectrometer on membrane-filtered supernatant of grain-brewed cooking wine and Formazin standard suspension were obtained with absorbance difference (ΔOD) calculated. The data were correlated with turbidity readings determined by a turbidimeter on same samples, determine the threshold for judging the turbidity of grain-brewed cooking wine.
Result The transmittance and absorbance measured at a wavelength of 800nm cannot accurately represent the turbidity of the grain-brewed cooking wine, A method to rapidly and accurately measure the turbidity of a grain-brewed cooking wine applying ΔOD at the wavelength of 450nm was established. The measurements significantly correlated with the NTUs obtained by the turbidimeter (R2=0.936). ΔOD450 of 0.024 was set as the threshold for acceptable clarity of cooking wines, with an accuracy rate of greater than 90%.
Conclusion The newly developed method required small sample size, simple operation, and short testing time. It could be applied for quality control for the industry.
