Optimization of culture medium for Lactobacillus plantarum R23 for malotactic fermentation

  • 摘要: 根据乳酸菌的营养需求,采用均匀设计优选具有苹果酸乳酸发酵能力植物乳杆菌R23生长的培养基组分,并对培养基进行正交优化,筛选出无Mn2+及含Mn2+培养基LH16、LH18组合。采用LH16、LH18培养基培养植物乳杆菌R23,在25℃恒温培养24h,菌量分别达到3.40×109cfumL-1和6.67×109cfumL-1。
    Abstract: Based on the nutritional requirements of lactic acid bacteria,the uniform design was used to optimize the formulation of culture medium suitable for the growth of the lactobacillus plantarum for the malolactic fermentation.Orthogonal optimization was further applied for the selection of the LH16(non-Mn2+) and LH18(with Mn2+) medium.By incubating the lactobacillus plantarum in the LH16 and LH18 medium at 25℃ for 24h,the cell densities were 3.40×109 and 6.67×109cfu per mL,respectively.They were twice as high as the MRS medium could produce.
