Abstract:
Gas chromatography-ion mobility spectrometry (GC-IMS) was applied to analyze the aromatic components in 27
Lentinula edodes. The measurement data were subsequently subjected to the principal component, clustering and heatmap analyses. Accordingly, the mushrooms were clustered into two groups. Two principal components of the volatiles contributed 30.2% and 26.9% of the total variance among the mushroom samples. The analytical method and the established fingerprints on the chemical components would be useful for future studies on
L. edodes.
