Physiological and biochemical analysis of Agaricus spawns during its aging process

摘要: 食用菌菌种随着培养时间延长,将会发生老化现象,产生一系列生理生化变化。研究了5个不同蘑菇菌株的菌种在老化过程中所发生的一系列生理生化变化。结果表明:随着老化程度的加深,各菌株间的菌种的相对电导率、丙二醛(MDA)含量、超氧物歧化酶(SOD)和过氧化氢酶(CAT)活性变化没有一致的规律性,但酸性磷酸酶(ACP)活性随着培养时间延长出现明显的降低趋势,可以做为菌种老化标志的一个生理生化指标。Abstract: Researches have already shown that aging of strains is common in the growth process of mushroom, and may accompany with a series of changes in physiology and biochemistry.This paper reported the invesitgations on the aging of the five strains, and results showed that changes in the relative rate of elecrical conductivity, MDA content, and the activities of SOD and CAT for each went differently.However, a decrease trend activity of ACP wasobserved and the activity of ACP was significantly different when each spawn was treated with different times of cultivating, which could be used as an indicator of aging degree of Agaricus spawn strains aging of mushroom.
