摘要: 介绍了红曲色素种类、安全性及其新近的应用研究,阐述了关于红曲霉液态培养的培养基配方、培养条件的研究进展,还对红曲霉的其他主要次级代谢产物的研究现状进行概述。Abstract: Taxology,safety and new applications of monascus pigment are discussed.Recent reports on the culture media and conditions for the monascus submerged cultivation are reviewed.Advances in the studies of the primary and secondary metabolites from the fermentation are also presented.
