Fruit quality and oxidoreductases activity of postharvest Ougan

摘要: 以成熟的有籽瓯柑为材料,研究了贮藏过程中果实品质和某些生理指标变化。结果表明,贮藏过程中果肉可溶性糖、还原糖、可溶性固形物、可溶性蛋白质含量,果肉POD、果皮POD、果肉SOD活性7个指标呈现先升后降的趋势,果皮SOD活性表现为先降后升再下降的趋势,而果肉可滴定酸、Vc含量及含水量3个指标则一直处于下降趋势。通过比较果皮与果肉氧化还原酶活性达到峰值时间和大小,说明果皮滞后于果肉进入衰老阶段,但抗氧化能力明显强于果肉,在延缓衰老、减少活性氧损伤等方面具有积极作用。Abstract: Changes in quality and some physiological indices of the seeded Ougan(Citrus suavissima.Hort.ex Tanaka) in storage were studied.The SOD activity of the peel decreased prior to being activated.The contents of soluble sugar,reducing sugar,soluble solids and soluble protein of the flesh,the POD activity of the peel and flesh,and the SOD activity of the flesh increased at first and then decreased.The titratable acid,Vc and water content of the flesh showed a downward trend during the entire storage period.It suggested that the peel lagged behind the flesh into the senescence stage,but had a stronger antioxidant capacity,which might play an important role on anti-aging and the damage reduction by free radical oxygen.
